Rhubarb & Custard Pancakes
Rhubarb season is long, meaning you have plenty of time to try something different. It always pairs nicely with custard, so why not layer them between a stack of pancakes!
Ingredients
Serves 2
1 packet of Marcel's Happy Pancakes
2 tablespoons custard powder
2 teaspoons sugar (for the custard)
2 cups milk
5 stalks of rhubard
1/2 cup water
2 tablespoons sugar (for the rhubarb)
Muesli or oats to garnish (optional)
Method
Custard - In a saucepan, mix custard powder, sugar and 1/4 cup milk to a smooth paste. Add remaining milk and gently heat, stirring constantly until mixture boils and thickens.
Stewed Rhubarb - slice rhubarb stalks into cubes and place into a saucepan along with water and sugar. Cover and simmer for 5 minutes, or until soft.
Layer your pancakes, with the custard and rhubarb pieces in between each layer. Add muesli or oats if you like. Put a generous amount on top. Service immediately while custard and rhubarb are still warm.
