Pineapple Pancake Bites

Our pineapple, mascarpone bites are a real hit when it comes to at-home entertaining, simply because they are so quick and easy to put together. This is a refreshing snack for the summer months.

Ingredients

Serves 24

1 packet of Marcel’s Petite Happy Pancakes
½ cup of finely cubed pineapple
1/2 cup of mascarpone
1 lime
4 mint leaves

Method

Finely dice ripe pineapple and put into a mixing bowl. Add grated lime zest and finely chopped mint and mix. Spread the mascarpone on top of each mini pancake, then pile the pineapple mixture on top. Garnish with some extra grated lime zest and mint leaves.
