Passionfruit & Lime Mini Pancakes
When passionfruit is in season it is best to make the most of it because before you know they’ll be gone again! Here we have combined passionfruit pulp with zesty lime and coconut yoghurt which we drained and turned into thick and creamy labneh. All sitting atop our vegan or petite mini’s we know they will be sure to impress not matter what your dietary requirements!
Ingredients
Makes 24 mini pancakes
1 x packet of Marcel's Petite Happy Pancakes or Plant-Powered Petite Pancakes
500g coconut yoghurt
4 tablespoons caster sugar
1 teaspoon vanilla bean extract
5 passionfruit
Zest 1 large lime
Chopped mint to serve
Method
Set a sieve over a large jug or bowl and line it with muslin or a clean tea towel. Spoon the coconut yoghurt out into the sieve and gather the edges of the muslin together and tie off tightly around the yogurt (not so tight that you are pushing the yoghurt out through the muslin however!). Cover and put in the fridge to drain for 18-24 hours. The longer you leave it the thicker it will get. The resulting product is called labneh.
Tip the labneh out into a small bowl and stir in 2 tablespoons of the caster sugar and the vanilla extract.
Scoop the passionfruit flesh into a small bowl then stir the remaining sugar and the lime zest. Add more zest or sugar to taste.
Arrange the pancakes on a platter, top with the coconut yoghurt, making a little depression with the back of a teaspoon for the passionfruit to sit in. Spoon over the passionfruit then garnish with some chopped mint before serving.
