Pancake Tiramisu
This delicious pancake tiramisu recipe is testament to the versatility of our pancakes. The pancakes lend this traditional Italian recipe a lovely chewiness and work so well with the richness of the mascarpone and the depth of the coffee. This is one to impress the guests!
Ingredients
Makes 4 generous servings or 8 small
300g mascarpone
125ml cream
2 teaspoons vanilla extract or paste
2 eggs
1/3 cup sugar
225ml strong coffee
Cocoa powder to dust
Method
Put the mascarpone, cream and the vanilla into a small bowl and mix well to combine, making sure you get rid of any lumps.
Separate the eggs and put the yolks into a bowl along with the sugar. Beat until pale and fluffy then add this to the mascarpone mixture and mix well. Put the whites into a separate bowl and whisk until stiff peaks form. Spoon a third of this mixture into the mascarpone and gently fold in. Add in the remaining egg whites and again fold gently in.
To make the tiramisu, spoon a little of the mascarpone mixture into 4 glasses then tear apart the pancakes and arrange them in a single layer, don’t worry if they overlap a little, then pour over the coffee. Repeat with the remaining ingredients then dust with the cocoa powder and refrigerate for a few hours, or even overnight if making ahead of time.
