Fried Pineapple & Ice Cream Pancakes
Are you a pineapple on pizza kinda person? Well we are into pineapple on PANCAKES.
Pineapple, lime and mint is a match made in heaven. In this recipe the pineapple is fried in butter and brown sugar with the addition of star anise which adds a lovely warmth. Lime juice and zest gives it a punchy zing and when served on top of our pancakes with vanilla bean ice cream it makes a tasty tropical treat!
Ingredients
Serves 4
2 tablespoons butter
2 tablespoons brown sugar
1 star anise
½ pineapple, peeled, diced
1 lime
2 packets of Marcel’s Happy Pancakes
Vanilla Ice Cream
Finely chopped mint to serve
Method
In a frying pan over a medium-high heat melt together the butter, brown sugar and star anise. Zest the lime and set aside. Add pineapple to the pan along with 1 tablespoon of lime juice and fry until the liquid thickens, stir in the lime zest.
Divide the pancakes between 4 plates, top with a scoop of ice cream then spoon over the pineapple and sprinkle over the mint. EAT EM UP!
