Curried Egg Blini
What came first the chicken or the egg? That doesn't matter, what matters is we've got a mouth-watering savoury blini recipe just for you.
There is something deceptively simple about this recipe. The egg mixture contains just three ingredients and yet they make for a deliciously tasty snack or finger food for your next soiree.
Ingredients
Makes 24 blini
4 eggs
½ teaspoon curry powder
2 ½ tablespoons mayonnaise
Finely chopped parsley to garnish
1 packet Marcel’s Fancy Blini’s
Method
Put the eggs into a pot, cover with water and put on the lid. Put onto a high heat and set
the timer for 10 minutes. Once it starts to boil rapidly, reduce the heat to a simmer. Once the timer sounds remove the eggs from the heat and run under cold water.
Peel the eggs and put them into a bowl along with the curry powder, mayonnaise and a
pinch of sea salt. Mash and mix together. Arrange the blini on a platter, spoon the egg mixture onto them, then garnish with parsley before serving.
