Crepe Quiche Cups

Quiche cups using crepes - who would have thought!? Our plain and gluten free crepes are super versatile. They can be used for both sweet and savoury options and are a good replacement for pastry.

Ingredients

Makes 12 

  • 2 packs of Marcel's Oh La La Plain & Gluten Free Crepes 

  • 1/3 cup chopped onion

  • 4 large eggs

  • 1/2 cup milk

  • 1/2 cup mayonnaise

  • 2 cups shredded cheddar cheese

  • 350g chopped bacon 

  • 250g roughly chopped spinach

  • 100g roughly chopped sundried tomato

Method

Preheat the oven to 180oC. Cook onion and bacon in a fry pan and set aside. Lightly spray muffin tray holes with oil spray and place one crepe into each hole. Put in the oven for 3 minutes. The crepes should not be brown, but dry like toast.

Place portions of bacon, onion, cheese, spinach and tomato into each muffin hole, on top of the toasted crepe. Whisk egg, milk and mayo and then pour into each of the muffin holes. Bake for 12-15 minutes until lightly golden and filling is set. Rest for at least 5 minutes before serving.
