Caramelised Onion, Goats Cheese & Walnut Blini
This is a classic combination and our light, fluffy blini are the perfect little bites to bring all these flavours together. If you want to prepare these ahead of time then you can caramelise the onion, prepare the walnuts and the goats cheese spread all the day before, bringing the caramelised onion to room temperature before assembling.
Ingredients
Makes 50 blini
3 tablespoons olive oil
40g butter
4 onions, quartered, finely sliced
125g goats cheese
75g Greek Yoghurt
1 x packet Marcel’s Fancy Blini's
100g walnuts, toasted, broken into pieces
Sprouts to garnish
Method
Heat the olive oil and butter in a heavy-bottomed frying pan over a high-heat. Fry, stirring frequently until caramelised. This will take about 20 minutes and you may have to turn down the heat a little as the moisture cooks out of the onions and they start to stick to the bottom of the pan. Remove from the heat once done.
Arrange the blini on one or two platters. Top with the caramelised onion, then the goats cheese followed by the walnuts and lastly the sprouts then serve!
