Brown Sugar Fried Apple & Walnut Crepes
Decadent breakfast or quick dessert? We’ll let you decide but either way we know you’ll love this autumnal offering which combines brown sugar fried apples with crunchy walnuts, our much-loved sweet crepes or gluten free crepes and a scoop or two of vanilla bean ice cream. Best enjoyed curled up by the fire with a hot cup of coffee.
Ingredients
Serves 3
1 packet Marcel’s Pancakes Sweet Crepes or Gluten Free Crepes
50g butter
4 tablespoons brown sugar
3 large apples, halved, cored
½ cup walnuts
Vanilla bean ice cream to serve
Method
1. In a heavy-bottomed frying pan over a medium-high heat melt together the butter and sugar. While the butter melts, cut each apple half into 6 wedges and add to the pan along with the walnuts. Cook, stirring from time to time for 15 minutes or until the apples begin to soften.
2. Warm the crepes as per packet instructions.
3. Arrange two crepes on each plate and fill them with apple slices. Top with a scoop or two of vanilla bean ice cream, scatter over the walnuts and drizzle over the syrup from the pan. Serve immediately.
