Cherry & Coconut Pancakes

Ingredients

1 pack of Marcel's Limited Edition Sunny Coconut Pancakes
1 cup frozen cherries
1 tablespoon white sugar
1 tablespoon water
0.5 cups coconut chips
Mascarpone

Instructions

Toasted Coconut:
Spread coconut chips on the base of a dry non-stick pan. Doing this in small batches on medium heat is best. Stir
every 30-40 seconds to ensure that the coconut chips do not burn. It will look like nothing is happening for the first
few minutes, but keep an eye on it as it will burn quickly.

Cherries:
Defrost frozen cherries. Usually the frozen cherries are pitted, but if not remove the pit.
Over medium heat, add the defrosted pitted cherries, sugar and water, into a non-stick pan.
Bring to the boil for approx 2-3 minutes.
Stirring every 30-40 seconds, reduce the heat & simmer for 2-3 more minutes.
Remove from heat.

To serve:
Spread mascarpone onto each Marcel's Sunny Coconut Pancake & stack.
Cherries and toasted coconut can be added in each layer or only on top.
