Berry & Mango Pancake Stack

  • 1x Marcel's Happy Pancakes 6 pack
  • 200g Mango Puree
  • 200g Mixed Berry Compote
  • 200g Diced Mango
  • 50g Dehydrated Raspberries
  • 50g Coconut Shavings (optional)
  • Candied Fruit (optional)
  • 200g Mascarpone Cream


  1. Whisk mascarpone cream till slightly thick
  2. Place pancake on a plate, spread mascarpone and top with diced mango
  3. Assemble the next layer or pancake with mascarpone and berry compote and diced mango
  4. For the top layer of pancake, spread mascarpone and berry compote and garnish with coconut and dehydrated raspberries
  5. Serve with a side of mango puree
